This coffee is a collaboration between Forest Coffee and producer Don Ronald, grown on his farm El Diluvio and processed at the wet mill of El Vergel. It's of the Tabi variety grown at 1600masl. Don Ronald has worked his entire life in coffee, gaining a fascination in flavour and skill.

El Diluvio is located near the town of Herveo in the department of Tolima, growing 9 different varieties ranging from 1000 to 3000 trees of each, but shockingly this is his first natural coffee!

They've called it “Citrus Winds” and in the cup we’ve tasted mint, lemongrass and a range of citric fruits. It undergoes a 140 hour fermentation process, mixed twice a day to "optimise the blend" - we can confirm, the blend was highly optimised.
