Hambella washing station in the Guji zone provides an income for 6000 of those, which doesn’t seem as impressive now I know the total figure of coffee smallholders in Ethiopia.
This coffee is made up of mixed heirloom lots, from a collection of farmers whose farms sit around 1900 masl. The cherries are washed with river water but no mucilage is removed, meaning the mucilage goes in with the little beans to ferment for 36-48 hours. With notes of peach, black tea with lemon, and caramel - this is a sweet and inviting classic washed Ethiopia.
