El Salvador Finca El Salvador Natural
One more natural El Salvador for this year from our friend Rodolfo Batlle. This time it’s from his family's farm - Finca El Salvador located on the top of Cerro El Aguila mountain in the Apaneca-Ilamatepec mountain range some 1650m up. It’s a Red Bourbon variety and natural processed with a twist - it’s first fermented in cherry for 48 hours after it’s picked - anaerobic style. This is all done by Rodolfo and the Productor team in Juayua. All things aside, it's delicious with syrupy notes of boozy chocolate bonbons and prunes.
