Dutch Barista Championship Final Coffee
Jasper was going to use a Sidra variety for his presentation in the Dutch Barista Championship. This coffee from the Potosi farm, also produced by Cafe Granja La Esperanza in Colombia.
Sidra is a hybrid crossing between red bourbon and typica, first discovered in Equador. Cafe Granja first planted the seeds in 2017 on the Potosi farm and this Sidra is their first harvest!
After picking they fermented the coffee in aerobic conditions for 48 hours before drying in the sun on raised beds. Expect a very complex and sweet coffee with a thick body and syrupy mouthfeel!
Roasted for espresso, but also nice as a filter!
