This coffee is classified as an “EF2 Natural,” a catchall name from Cofinet for a range of “extended fermentation” processes. This coffee is first exposed to a dry aerobic fermentation of 24 hours before being placed inside Grainpro bags for 50 hours at a temperature below 22°c. Then the whole cherries are placed on raised beds until 11% moisture content is achieved, hence the extended fermentation natural.
While the processing this year is the same, there is a much more balanced coffee in the end. A lot of us loved the sheer explosiveness of flavor from last year’s lot, overall this release has been a lot less polarizing, and still swimming in a depth of flavor.
